fresh strawberriesHere are some Spring updates for Urban Community Life’s (UCLife), 2016 summer camp.

We have an incredible amount of strawberries on the farm right now, and it’s the easiest way to support the mission of Urban Community Life! Come pick through the rows for juicy red gems and try the Strawberry Shortcake recipe I posted below.

Young farmers will enjoy a weekly, hands on, “lunch & learn” food program with Carroll County Ag Center extension agent, Michelle.

Urban Community Life will also be working alongside a state funded, job training program for unemployed men on Tuesdays and Wednesdays. Bryan Fox and his five strawberry blonde boys will also be working with the same group of men on Thursdays and Fridays at God’s Farm.

I met both Bryan Fox and Shaquita Gatewood at Urban Seminary of Atlanta’s weekly luncheons with the intent to network and partner with urban missionaries to provide the support and resources necessary to build vibrant communities and provide positive youth leadership.

Today, Shaquita Gatewood brought nine young ladies from her Atlanta Lakewood neighborhood to pick strawberries. The girls plan to sell the berries at their local produce market. This one fine day picking juicy berries must be better than all summer camps combined.strawberries

Strawberries go a long way in Strawberry Shortcakes: Sift 2 cups bread flour, 1 tBsp baking powder, 3 tBsps sugar, cut in 3 tBsps Earth Balance Butter, stir in 1 cup vanilla soy milk. Spoon and bake buscuits @ 500 for 10 minutes. Wash and slice a large bowl of strawberries, soak in orange juice and sugar to taste. Chill one can coconut cream and whip with blenders or chill a pint of full cream milk and whip until frothy. Add 1 tsp vanilla and 1 tBsp sugar to taste. Build a plate with 1/2 a biscuit piled high with strawberries, topped off with cream. You have permission to tinker with this recipe, because it can always get better.
